About Zuwaigani

Zuwaigani can be found in the depths of the Japan Sea and the Sea of Okhotsk. Males sport shells about 15 cm wide, while females possess more petite shells, measuring between 7 to 8 cm. These crabs are known by different names across various regions. Males are often referred to as Matsuba-Gani or Echizen-Gani, and females are termed Seiko-Gani or Kobako-Gani.


Zuwaigani Nigiri: A Unique Experience
While Zuwaigani doesn't typically feature in traditional Edo-style sushi, the leg meat of the male crab is a sought-after ingredient for sushi due to its delicate texture and sweet flavor. With increased imports from countries like Russia and Canada, this seafood treat is becoming more prominent on sushi menus.

Known as "Queen Crabs," Zuwaigani boasts high free amino acid levels, including sweet-tasting glycine or alanine, umami-rich glutamic acid, and slightly bitter arginine. This well-balanced combination of flavors contributes to its distinct and unparalleled taste.

Thawing Instructions



For optimal flavor and safety:


1. Refrigerator Thawing: This is the recommended method. Place the frozen seafood in the refrigerator and let it slowly thaw overnight.


2. Cold Water Thawing: Seal the seafood in a plastic bag and immerse it in cold water for a brief period.


3. Microwave Thawing: Only use the microwave's defrost setting, stopping when the product is pliable but remains icy.



Please refrain from using the microwave's regular settings to defrost the product, as it can compromise the quality and safety of the seafood.
